Stick and Rudder by Wolfgang Langewiesche - a classic work on the basics of actually flying an airplane.

The Student Pilot's Flight Manual by William Kershner - one of the most famous guides to learning to fly.

Private Pilot Handbook by Rod Machado - recently updated to include current rules and regulations.  Explains topics in easy to understand ways laced with Rod's unique brand of humor.  Also available in audiobook format.

Airplane Flying Handbook - FAA guide to the basics of flying.  Downloadable in PDF format from the FAA or available in soft cover.
Pilot's Handbook of Aeronautical Knoweldge - FAA guide to the theory of flight and associated topics.  Downloadable in PDF format from the FAA or available in soft cover.
